A Great Side Dish Recipe: Greens Salad (with a Technique)


The side dish we would like to recommend this time is a salad full of health, made of the plants we chose as of 28 February around the Mediterranean.  


You may prefer your favorite ones or the ones available in your region but, for this salad, we chose the following ingredients:


1-Sorrel

2-Scallions

3- Parsley

4- Nettle

5- Tomato (not in its seasonal taste of July and following few months but it is OK for us)

6- Rock or sea or Himalaya salt 

7- Olive oil 

8- (Optional) mint and sumac

9- (Optional) some pomegranate or pomegranate syrup

10- (Optional) vinegar or lemon


A salad making technique:


We would like to mention a technique of making a salad. We first saw it from a video of Ayhan Sicimoglu, a Turkish musician, traveler, and TV star. The film he shows the technique is in the Turkish language and about making musakka, a shared delicacy of the Greek and Turkish cultures.


Into a plastic bag:


  • Cut the sorrel, scallions, parsley, nettle, and tomato into equal pieces

  • Add the rock or sea or Himalaya salt

  • Add mint and sumac if you prefer

  • Add pomegranate or pomegranate syrup if you like

  • Add vinegar or lemon depending on your taste


Start shaking the bag until they are stirred well.


Put the mixture into a plate and add the olive oil.


You may wish to garnish it with salty cheese of your choice.
