A Great Breakfast Recipe: An Extremely Healthy and Delicious Omelet
One of the most unfortunate things we encounter in our travels is the breakfast hotels offer, as you probably know.
If you are at home or somewhere with the means to cook and the marketplace where you can buy the ingredients (which must be seasonal and natural), we would like to recommend an extremely delicious and healthy omelet you can make especially in winter months.
It is said that eating garlic and onion constantly buttresses our immune system to the extent that we do not have flu, particularly on these days dominated by the impact of the Covid-19 coronavirus pandemic. So this recipe is full of onion, possibly more than any other meal with onions. You can find it around the Mediterranean and Black Sea regions, which offer lots of greens. You can pick up your favorite plants and herbs to create the balance that is the essential thing in cooking (although the scallions can be exaggerated this time) but we preferred the following ones: 1-One medium-size onion 2- Lots of scallions as you like 3- A little parsley 4- Nettle or spinach of your like in terms of amount; spinach is preferable 5- (Optional) Tomato (not in its seasonal taste of July and following few months but it is OK for us) or tomato sauce 6- Rock or sea or Himalaya salt 7- Olive oil 8- (Optional) a clove of garlic 9- Some spices, particularly hot ones 10- (Optional-but recommended) cheese - First, put the olive oil of your like into a pan and immediately add the sliced onion - Add the scallions and spinach or other plant that you prefer - Cover it and let it cook well - If the spinach or other things are very fresh, let them release their juice. If not, add a half glass of water.

- Add the tomatoes or tomato sauce
- Add the salt and spices as you prefer
- Stir them really well. The trick is: the more you stir the tastier they might be
- When you are happy with their harmony, add your eggs and put the cover of the pan and keep cooking a little bit more until it is done well
- Grate the cheese on it and wait for few minutes more
- Garnish it with the parsley if/as you like
